This pectin is specially adapted for making fruit pastes and gelled confectionery.

The gel formed is not reversible by heating. The final texture is fairly firm and not very melting.

Dosage: from 10 to 12g / Kg - Processing temperature: 80 ° C-85 ° C.

Before use, mix the pectin powder with 8 to 10 times the weight of sugar.

Complete dissolution is obtained in approximately 15 minutes. The final texture is obtained after 24 hours.

Ingredient: Pectin E440, potassium and sodium tartrate (E337), dextrose, sodium polyphosphate (E452).
