Pectin "Rapid" - FUSEAU - 30g

"Rapid" pectin powder is a gelling agent that reacts in acidic environments and contains a high driede tract. It is used for making fruit jellies or jams.

Dosage: 1 to 3g/Kg - Processing temperature: 80 ° C.

Before use, mix the pectin powder with 8 to 10 times the weight of sugar.

Complete dissolution is obtained in approximately 15 minutes. Gelation is obtained by the addition of an acid (citric or tartaric).

The gel setting takes place during cooling, it is rapid about 4 to 8 minutes.
